From Humble Beginnings to Unparalleled Success

“When the war broke out in Lebanon in 1975, my cousin George Aboujaoude, better known as ‘JouJou’ to all of his friends and family, came to the US to find a better life. My parents (my dad and JouJou are first cousins and were best friends) had already arrived here on their honeymoon. When the war closed the airport in late 1975, they, like many others, became refugees scrambling to survive. JouJou, a jack of all trades, had traveled the world from Europe to Australia to the Middle East and now the United States. He had mastered many crafts along the way—hairdresser, carpenter, accountant. While working odd jobs in Birmingham, he noticed the lack of quality pita bread. Determined as always, JouJou decided to learn the art of baking bread, studying old recipes and methods passed down from generations in Lebanon. He explored equipment and facilities, finally shipping the latest and best state-of-the-art machinery from Lebanon. I was there as a small child—he spent countless sleepless nights running batch after batch, trying to perfect the recipe and the baking process. He and my dad got into it on many occasions, that’s for sure. But finally, he mastered the craft and produced quality pita bread for the local community.


Fast forward to now, I have taken over the business—remembering what it took to launch it—and I hope to not only feed the local community but also bring our high-quality, delicious bread to other surrounding communities. Our bread doesn’t have any preservatives, so in order to deliver fresh bread, it has to be within a 500-mile radius. But we have also found ways to freeze it and thaw it so it arrives like fresh bread at your doorstep.” - Hanny Akl

1975

A New Beginning

- When war broke out in Lebanon, JouJou—Hanny’s cousin—embarked on a journey to the U.S., joining family who had already sought refuge.
- A refugee with a knack for reinventing himself, he started his American chapter with determination and resourcefulness.

1984

Mastering the Craft

- JouJou imported cutting-edge baking equipment from Lebanon and spent countless sleepless nights perfecting the art of pita bread in Birmingham.
- His relentless pursuit of quality set the foundation for a legacy of delicious, hand-crafted pita.

Late 1980's

A Shift in Ownership

- Recognizing his own calling, JouJou passed the torch to longtime family friend Naji Constantine, who brought a sophisticated, clean-eating approach to the business.
- Naji's unwavering commitment to toxin-free, high-quality ingredients and precise baking techniques redefined the craft.

Present Day

Carrying the Legacy Forward

- Hanny and Mimie, with fond memories and a passion for excellence, have taken over to continue the tradition of chemical-free, quality pita bread.
- While they stay true to their roots, they're also expanding their reach with frozen options to keep the quality intact—even beyond a 500-mile radius.
